Colour: intense garnet red.
Nose: very floral (violet), developing into licorice and spices.
Palate: supple attack with a dominant of red fruits. The final is long with spices.
The soil is granitic and slightly acidic, on the right bank of the Rhône on the foothills of the Massif Central. M. Chapoutier owns the parcel of Saint-Joseph, situated between Mauves and Tournon, which has given its name to the appellation.
Maturity evolution is regularly checked. Grapes are hand-harvested to optimal maturity.
The wine is mainly aged in vats with a part of oak casks from 12 to 18 months.
