Great intensity of dark berries and lovely tannin structure.
The wine can be either single vineyard or blends, depending on what makes the strongest and most interesting wine. Having spent a good amount of time making organic and low input wines, I have brought this approach to Spinning Top, whereby, I let the fruit and environment do the work and I just set the wheels in motion so to speak. With low sulphur regimes, the use of wild ferments, extended lees ageing, and the occasional influence of oak, the wines represent the uniqueness of the sites in which the grapes grow, with complexity derived from the forces of nature and judicious blending.
